项目教学法在应用型本科食品微生物检测综合实习中的应用

摘要
为了更好地适应应用型本科教育的人才培养目标,在食品微生物检测综合实习课程中,以"学校周边散装食品微生物污染状况调查"项目为例,首次实施了项目教学法的改革。教师以人为本,因材施教,合理安排任务,以学生为主体,进行启发式引导,在训练学生实践技能的同时,注意其综合素质的培养。全班完成了10家食品店共21种散装食品的微生物指标检测并形成综合报告。在此过程中,不仅使学生的实践操作能力得到了锻炼,而且在知识的综合运用、独立规划实施、分析解决问题、自我管理及团队协作等方面得到了较大提升。
In order to adapt to the talent training objective of applied undergraduate education better,the reform of project teaching method was carried out for the first time in integrative practice of food microbiology detection with"investigation of microbial contamination of bulk food around college"as an example. By people-oriented,individualized teaching,task was reasonably arranged. As the main body in course,students were heuristic guided to be trained both in practical skills and comprehensive quality. Microbiology detection of 21 kinds of bulk food from 10 food stores was made and a comprehensive report was formed. During this process,the practical skills of students were not only improved,but the comprehensive use of knowledge,the independent planning and implementation,the abilities of analyzing and solving problems,the self-management and the team collaboration were greatly improved.
