生物强化富锌食品的研究进展

摘要
微量元素锌参与机体内的各种代谢,在人的皮肤、骨骼、头发、内脏、血液中含量丰富,在维持人的生命活动中发挥着重要的作用。生物强化是指在生物生长及其代谢过程中进行营养元素的富集以提高其营养价值。通过生物强化可将外源添加的无机锌转化为生物锌,获得的富锌食品具有安全可靠、易于吸收、稳定性强的优点。本文归纳总结了富锌食品的研究意义和发展现状,对近年来主要研究的富锌茶品、富锌食用菌菇、富锌酵母、富锌水稻以及富锌果蔬等富锌食品的研究进展进行了综述,生物强化富锌食品具有安全稳定的特点,相比过去,对于富锌食品的研究也有显著进展,随着人们对饮食营养的重视,锌强化食品的数量会不断增加,以期为未来生物强化富锌食品的研究提供依据。
The trace element zinc participate in numerous kinds of Metabolisms in our body,and be rich in human's sink,bone,hair,viscera and blood,also play a significant role in maintaining human's physiological activities.Biofortification is the enrichment of the nutrient elements in the process of biological growth and metabolism to improve their nutritional value.By means of biofortification,the exogenous inorganic zinc can be converted into biological zinc to obtain the zinc enrich foods with the advantages of safe and reliable,easy to absorb,strong stability,In this paper,the significance of zinc enrichment food were generalized and current situation of it's development,the research progress in zinc-enrichment food include zinc-enrichment tea,zinc-enrichment mushroom,zinc-enrichment yeast,zinc-enrichment rice,zinc-enrichment fruits and vegetables in recent years was summarized.Biofortification zinc-enrich food have the characteristics of safe and stable,compared to the past reach of zinc-enrichment food,it has a significant progress.With emphasis on nutrition and the quantity of zinc enriched food will continue to increase,and hope for the future study of microorganism zinc rich food.
