微生物转化生产β-苯乙醇的研究进展

摘要
β-苯乙醇是一种具有玫瑰风味的芳香醇,目前在食品、化妆品等方面有广泛应用。随着社会经济的发展,生物转化法生产天然β-苯乙醇备受关注。本文从天然β-苯乙醇主要的生物合成途径、发酵过程中副产物乙醇导致的Crab仕ee效应解除、原位分离技术在β-苯乙醇发酵体系中的应用、β-苯乙醇香气品质的分析与调控等四个方面综述了微生物发酵生产天然β-苯乙醇的最新进展。并简要介绍了本课题组对生物转化β-苯乙醇的研究情况。
P-Phenylethanol is an important flavor and fragrance compound with a rose like smell.It is widely used in many industries,such as food industry and cosmetic industry.With the development of social economy,the production of natural P-phenylethanolby microbial biosynthesis has attracted much attention.This review described the mainpathways in the production of P-phenylethanolby yeasts,the solution of Crabtree effectin the fermentationprocess,the separation ofp-phenylethanol using an in situ separation technology,and the aroma quality analysis of P-phenylethanol.Moreover,it also briefly introduced the advances in biotechnological production of 2-phenylethanolin our research group.
