食品检验中PCR技术的应用实践

摘要
最近几年,食品安全成为人民最为关注的问题。三聚氰胺事件给人们敲响了警钟。同时,由于微生物及微生物产生的各种毒素引发的食品污染也是层出不穷。在这样背景下,PCR技术的运用成为提高食品微生物检测质量的重要方式之一。在食品微生物检测的各个领域中,PCR技术发挥着其独特的优势,特别是在困难细菌培养检测和抗原结构复杂的细菌检测上,都显示出其快、准的优势。
