摘要

食品生物化学是食品质量与安全专业一门重要的专业基础课。该课程知识点多,内容抽象,枯燥乏味。学生难以形成知识结构体系且对该课程缺乏学习兴趣。本文根据食品生物化学课程的教学现状存在的难题,选取啤酒酿造的教学案例,将食品生物化学的知识章节精准对接啤酒酿造的工艺过程,借助一个简单的啤酒酿造案例帮助学生理解知识要点,打造课程完整的知识体系。该方法深入浅出,形象生动,教学效果良好。
        Food biochemistry is one of the important basic courses in the major of food quality and safety. However, this course has more knowledge points which are difficult to understand. It is difficult for students to form a knowledge network system, so students lack interest in this course. In this paper, according to existing problems in the teaching situation of food biochemistry, beer brewing case was selected to correspond to the food biochemistry chapters and help the students to understand the key points of the course and make a complete knowledge system. And this method is simple, vivid and effective.
