鱼干制品中真菌及次生代谢产物污染现状

摘要
介绍在不同地区晾晒和烟熏鱼干制品中常见污染真菌种类(曲霉属、镰刀菌属、青霉属)以及产生的真菌毒素种类(黄曲霉毒素、赭曲霉毒素、玉米赤霉烯酮)的来源及其危害,并简要阐述了鱼干中霉菌污染的原因和防止污染的措施。
