Enhancement of physical stability and bioaccessibility of tangeretin by soy protein isolate addition

Tangeretin-loaded supersaturated nanoemulsion were prepared by self-emulsification. Glycerol and soy protein isolate benefited for the high transparency. Soy protein isolate addition enhanced tangeretin retention (>80%) in nanoemulsions. Tangeretin bioaccessibility could be maintained at around 60%.
